The 'truffle man' from ANTICHI SAPORI DI LANGA(Ancient flavors of Langa)of REVELLO CRISTINA is located in Rione Fontaine, 5; 12050 Torre Bormida, Italy. Torre Bormida is a comune (municipality) in the Province of Cuneo in the Italian region of Piedmont. As of 31 December 2004, it had a population of 216 and an area of 3.0 square miles.Torre Bormida bordersthe municipality of Cortemilia. ANTICHI SAPORI DI LANGA has obtained the recognition of excellence in the food sector of FOOD AND GASTRONOMY PRODUCTS UNDER GLASS. They offer a choice of fresh truffles,anchovies with truffle tumini preserved in oil, white truffles, porcini mushrooms and typical delicacies of Piedmont made with raw materials of absolute quality, proven by the mark "Piemonte Eccellenza Artigiana". The truffles are collected directly by their own dogs from the trifulau zone. They have been awarded the prestigious recognition of handicraft excellence in the food sector "Sottovetro Products" conferred by the Piedmont Region. Ancient Flavors of Langa is present at various trade fairsincluding the International Fair of the White Truffle of Alba, which has provided the world of the truffle of Grinzane Cavour and the various premiums to VIPS. The history of truffle offers many surprises. It is present in Mediterranean cultures from very ancient times: in the Bible (Genesis), Giobbe is referred to as a dudaims eater; the Greek created the name ydnon, from which idnology (science of truffles). The best names of Latin and Greek culture can be joined with truffles: Plutarch considered it the fruit of a mix of rain, heat and the ground; Plinius defined it as a miracle of nature, a jewel of the ground; Goivenales called it son of the lighting. The fortune of truffles is surely due also to the aphrodisiac properties it was believed to have, for which it was dedicated to Aphrodites, goddess of love. They became a traditional gift for the lords. Their fortune changed in the Renaissance, together with the brginning of a true culture of food and cooking. The truffle knew the luxury of the most refined courts, and became an essential ingredient of haute cuisine. In the Eighteenth century it was discovered from a naturalistic point of view: in this century the micologic science begins. The first official classification of the white truffle was made by count De Borch, a polish naturalist (Lettres sur les truffes du Piedmont 1780); he was followed, after a few years, by the official classification of the mushroom as tuber magnatum by the Piedmontese scientist Vittorio Pico.
